Oh this sounds exciting! I have never used sweet potato in this way. How is the flavour? Does the sweet potato help balance with the strong buckwheat? I often find buckwheat on it's own quite overpowering but know it is really beneficial for me.

Yes, exactly! The sweet potato adds a natural sweetness and creaminess that really mellows out the strong, earthy flavor of buckwheat. It creates a much more balanced and comforting taste. Buckwheat still shines, but in a gentler, more delicious way!
