Ultimate Vegan Veggie Powerhouse Soup
Elevate your plant-based culinary repertoire with the Ultimate Vegan Veggie Powerhouse Soup! Packed with nutrient-rich ingredients like broccoli, sweet potatoes, and tomatoes, this hearty concoction is seasoned to perfection for a deluxe dining experience.
Ingredients:
1 medium onion, chopped
2 garlic cloves, minced
2 cups broccoli chopped
2 medium sweet potatoes, diced
1 large carrot, chopped
2 large tomatoes, chopped
2 teaspoons ginger powder
1 teaspoon black pepper
2 teaspoons ground turmeric
4 teaspoons paprika
¼ cup nutritional yeast
8 cups water
Instructions:
Wash and prep all the vegetables.
Sauté the onion with 1-2 tablespoons of water until onions are translucent in a large pot. Add the minced garlic and cook for an additional 2-3 minutes.
Add the rest of the vegetables and spices to the pan and cook for about 10 minutes. Add 1-2 tablespoons of water at a time, as needed, to keep the vegetables and spices from sticking.
When the carrots and sweet potatoes are soft, add the water. Bring to a boil and cook for about 3-5 minutes, or until reaches desired texture and temperature.
Serve hot and enjoy!
Tips:
For a creamier soup, add a can of coconut milk or white beans to the pot along with the water.
To make the soup ahead of time, simply cook it according to the instructions and then let it cool completely. Once cool, transfer the soup to an airtight container and store it in the refrigerator for up to 3 days. When you're ready to eat, simply reheat the soup on the stovetop or in the microwave.
Garnish your soup with a dollop of vegan sour cream, shredded vegan cheese, or fresh herbs.
