Gastronomers and gastronomic communicators, those who can actually talk head to head with FOH and chefs, have a powerful influence here. Every time I ask for “no meat, preferably no animal products” I feel a nerve uncovers. Like every time I ask for the non alcoholic option.

But the next time I visit, there has been a change: all of a sudden more vegetables in every dish, and in many cases, a chef and a brigade who started considering an alternative way.
