Start your day with a burst of flavor and nourishment with our Spiced Sweet Potato Groatnola. The delightful blend of buckwheat groats, sweet potato, and warm spices will fuel your morning adventures with every crunchy and wholesome bite!
Ingredients:
1 cup uncooked buckwheat groats, rinsed
1 large cooked sweet potato (about 1¼-1½ cups mashed)
1-2 teaspoons cinnamon or more to taste
2-3 teaspoons pumpkin pie spice or more to taste
8-12 cups rolled oats
Instructions:
Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.
Cook the Sweet Potato: You can either bake or steam the sweet potato until it becomes tender. If baking, pierce the sweet potato with a fork and bake at 400°F (200°C) for approximately 40-50 minutes, or until it's soft. If steaming, peel and chop the sweet potato into chunks and steam until tender. Let the sweet potato cool slightly before mashing it.
Mash the Sweet Potato: In a mixing bowl, mash the cooked sweet potato until smooth. You can use a fork or a potato masher for this.
Mix in the Spices: Add cinnamon and pumpkin pie spice to the mashed sweet potato. Adjust the amount according to your taste preferences. Mix well until the spices are evenly distributed.
Combine the Buckwheat Groats: Add the rinsed buckwheat groats to the spiced sweet potato mixture. Stir well, ensuring that the groats are thoroughly coated with the spiced sweet potato mixture.
Add the Rolled Oats: Gradually add the rolled oats to the bowl, mixing as you go. Keep adding oats until the mixture reaches your desired granola texture. The more oats you add, the chunkier your Groatnola will be.
Spread on Baking Sheet: Transfer the Groatnola mixture onto the lined baking sheet and spread it out in an even layer.
Bake: Place the baking sheet in the preheated oven and bake for about 25-30 minutes or until the Groatnola becomes lightly golden, crispy, and fragrant. Stir the mixture once or twice during baking to ensure even cooking.
Cool and Store: Remove the baking sheet from the oven and allow the Groatnola to cool completely on the sheet. Once cooled, transfer the Groatnola to an airtight container for storage.
