Ingredients:
2 large russet potatoes (about 2 cups mashed)
1 ¼ cups all-purpose flour (plus more for dusting)
½ teaspoon salt
½ teaspoon garlic powder (optional)
For the Garlic Butter Sauce:
2 tablespoons vegan butter
3 cloves garlic, minced
¼ teaspoon red pepper flakes (optional)
2 tablespoons chopped fresh parsley
1 tablespoon nutritional yeast (optional, for a cheesy flavor)
Salt & black pepper to taste
Instructions:
Make the Dough: Boil or steam the potatoes until fork-tender, then mash them until smooth. Mix in salt, garlic powder (if using), and flour until a soft dough forms. Add more flour if sticky.
Shape the Noodles: Roll the dough into a long rope on a floured surface and cut into 2-inch pieces. Flatten slightly with your fingers.
Boil the Noodles: Bring a pot of salted water to a gentle boil. Drop the noodles in and cook until they float (about 2-3 minutes). Drain and set aside.
Prepare the Sauce: In a pan, melt vegan butter and sauté garlic until fragrant. Add red pepper flakes, cooked noodles, and toss until coated. Stir in parsley and nutritional yeast, then season with salt and pepper.
Serve & Enjoy! Garnish with more fresh herbs and serve hot. Pair with a simple green salad or roasted veggies.
