Vegan Eggnog
Serves: 4
Prep Time: 10 minutes
Ingredients:
2 cups unsweetened almond milk (or cashew milk for extra creaminess)
1 cup canned coconut milk
1/3 cup maple syrup or agave nectar (adjust for sweetness)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (plus extra for garnish)
1/4 teaspoon vanilla extract
A pinch of turmeric (optional, for a golden hue)
1/3 cup dark rum or bourbon (optional, for adults)
Instructions:
Blend the Base: In a blender, combine almond milk, coconut milk, maple syrup, cinnamon, nutmeg, vanilla extract, and turmeric. Blend until smooth and frothy.
Heat it Up: Pour the mixture into a saucepan and gently heat over medium-low heat, stirring occasionally. Do not boil—just warm it through.
Optional Booze: If using alcohol, stir it in just before serving.
Serve: Pour into glasses or festive mugs, and sprinkle a pinch of nutmeg on top for garnish.
Optional Whip: Top with a dollop of coconut whipped cream for extra indulgence.
Tip: For a chilled version, blend all ingredients and refrigerate for at least an hour. Serve over ice or as-is.
This vegan eggnog is rich, creamy, and perfect for sipping by the fire while celebrating the season!
