Ingredients:
¾ cup uncooked quinoa
4 cups salt-free vegetable broth or water
1-2 tablespoons salt-free southwest/chili seasoning (adjust to taste)
1 large or 2 small sweet potatoes, diced
1.5 cups frozen corn kernels
1.5 cups cooked beans (of your choice)
1 (BPA-free) can diced tomatoes or 1-2 fresh tomatoes, diced
Black pepper, to taste
Dried or fresh cilantro, to taste
Instructions:
Rinse quinoa under cold water. In a large pot, combine quinoa and vegetable broth (or water). Bring to a boil, then reduce heat, cover, and let it simmer for about 15 minutes or until quinoa is cooked and liquid is absorbed.
Stir in the southwest seasoning, adjusting to your preferred level of spiciness.
Add diced sweet potatoes and continue to simmer for an additional 10-12 minutes, or until they are tender.
