Ingredients:
4 medium sweet potatoes
½ cup steamed green peas
2 tablespoons minced fresh chives or scallions
¼ cup raw slivered almonds
Balsamic Date Glaze
Black pepper to taste
Instructions:
Preheat the oven to 400ºF. Place sweet potatoes on a lined baking sheet. Prick with a fork and bake for about 1 hour until tender.
Once baked, let the potatoes cool slightly. Cut in half lengthwise, leaving a ¼-inch layer attached to the skin. Scoop out the insides into a bowl.
Add peas and chives, then mix thoroughly. Spoon the mixture back into each potato half.
