High-Protein Vegan Salad

1/2 cup sliced cucumber
1/2 cup cooked chickpeas
1/4 cup crumbled tofu, marinated in your favorite sauce (optional)

Lemon Vinaigrette (recipe below)
Toasted pumpkin seeds, for sprinkling
Lemon Vinaigrette
1/4 cup olive oil
2 tablespoons lemon juice
