Ingredients:
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 jalapeno, seeded and minced (optional)
1 cup dried kidney beans, soaked overnight or rinsed and canned
1 cup dried black beans, soaked overnight or rinsed and canned
1 (28-ounce) can whole peeled tomatoes, crushed by hand
1 (14.5-ounce) can diced tomatoes, undrained
1 cup vegetable broth
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper (adjust to desired spice level)
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup vegan cheddar cheese, shredded
1/4 cup fresh chives, chopped (for garnish)
Instructions:
Heat olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened, about 5 minutes.
Add the garlic, bell peppers, and jalapeno (if using) and cook, stirring occasionally, until softened, about 5 minutes more.
Stir in the kidney beans, black beans, crushed tomatoes, diced tomatoes, vegetable broth, chili powder, cumin, paprika, oregano, cayenne pepper, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for 30 minutes, or until the beans are tender.
