Ingredients:
2 cups soy curls
1 cup peas and carrots, mixed
4 cups mashed potatoes
1 onion, finely chopped
3 cloves garlic, minced
1 cup vegetable broth
2 tablespoons tomato paste
2 tablespoons soy sauce
1 tablespoon olive oil
Salt and pepper to taste
Fresh thyme for garnish
Instructions:
Preheat oven to 375°F (190°C).
Rehydrate soy curls according to package instructions. Drain and set aside.
In a large skillet, sauté chopped onion and minced garlic in olive oil until golden brown.
Add rehydrated soy curls, peas, and carrots to the skillet. Cook for 5 minutes, stirring occasionally.
Stir in tomato paste, soy sauce, and vegetable broth. Simmer until the mixture thickens. Season with salt and pepper to taste.
